In 2011, deep in the heart of Sugarcane Country, three childhood friends had a revelation. Once quietly produced in the backwaters of the Bayou, rum - America’s original spirit - had become a forgotten one. The ingredient central to rum - sugarcane - had been cultivated in their home state since the 1700s, but no one had yet harnessed this abundant natural resource to create a top-notch, premium rum. They vowed to change that by crafting a Louisiana rum. Two years later, the Bayou® Rum Distillery opened its doors in Lacassine, LA. Utilising traditional methods with state-of-the-art technology from fermentation through distillation, maturation and bottling, Bayou® Rum has earned its title of #1 Craft Rum in America.
Bayou Reserve Rum

Handcrafted Louisiana Rum
Inspired by the early rum producers in Louisiana, the combination of fresh cane sugar and creamy molasses creates a very special rum experience. Following old artisan traditions, Bayou Select Rum is distilled in copper stills using the pot still method and then matured by Master Blender Rieniel Vicente using the solera method in American oak bourbon barrels and French oak Bordeaux barrels for up to four years. The result is a particularly mellow and flavour-balanced brown rum with a complex and elegant character. Each bottle is signed and numbered by Bayou's Master Distiller.
Tasting Notes
Nose: Creamy vanilla and cinnamon, transitioning to fresh apple notes, toasted wood and nuts.
Taste: Opens with soft butter and cinnamon notes, a dry oak character reminiscent of old bourbon, followed by strong flavours of cinnamon and maple
Finish: Dry, with lingering notes of dark fruits and wood.
Bayou XO Rum

Tasting Notes
COLOUR: deep mahogany
AROMA: lightly floral mixed with cedar, tobacco and dried dark fruits.
TASTE: layered and complex with notes of tobacco, plum and oak and slight sweetness.
AFTERNOON: long and pleasantly dry with honey, black pepper and sherry, which is no surprise as part of it is refined in sherry casks.
